This is an exciting time to be into improving school food in America. Every day, I read about local changes being made in progressive schools around the country. Cutting out flavored milk here, buying locally there, and adding a salad bar for healthy options.
Speaking of salad bars… Renegade Lunch Lady Ann Cooper has partnered with Whole Foods Market to bring salad bars to every public school in this country. It’s called the Great American Salad Bar Project.
So far, this project has raised over $900,000. To apply for a salad bar, click on this link. I just sent an email to the principal at my daughter’s school to make sure she knows about it. If there was a salad bar, I would consider paying for school lunch.

On a related note, President Obama has proclaimed September “National Childhood Obesity Awareness Month.” Yes! I firmly believe that school food plays a role in this.
In a way, it’s ironic that we have to raise awareness about obesity at the same time that we have to raise awareness about hunger…
Our world is out of balance. We humans are out of balance. How about if we ate enough? Enough whole, unprocessed foods to be healthy. No more, no less. A salad bar in your child’s school could help. Make it happen.
Eat food. Not too much. Mostly plants.
