Today is Day 22 of the Elimination and Detoxification diet. This is a big day. It is Soy Day!
Indeed, today I add soy products and all other beans (yeah, not so much…) back into my diet.
A carton of unsweetened soy milk has been sitting, unopened, in the fridge the past three weeks, waiting patiently for this day to arrive. This will be my milk of choice for the next three days as I gorge on all things soy.
I really love tofu, but rarely cook it at home. One reason is that I’m the only one in the family who will eat it, so it feels like a bit of a waste. The other reason is that keeping leftover, uncooked tofu soaked in fresh water seems a tad un-simple (kind of like maintaining a hot tub).
But today, I will bravely face this new world of tofu cooking and make scrambled tofu with mushrooms for lunch and a raspberry pudding tofu dessert (yes, still craving sweets!). I’m pretty excited. Lentils are good, but only when they’re not your primary source of protein for weeks on end.
