I enjoy preparing eggs all sorts of different ways, but boiled eggs is the hands-down favorite. So three of the eggs ended up in a pot of simmering water.
I was a little worried that the eggs would be hard to peel, since they were so fresh. Not so much. The shell came right off and I sliced a couple of the eggs in my handy egg slicer. (The remaining egg was put in the fridge for future enjoyment.)
I fixed three sandwiches with bread from the mini-loaf I bought at the Farmers Market. Swedish caviar spread, sliced eggs, and dill. Yum!
